Tuesday Recipe: Mussels in Garlic-White Wine-Cream Sauce

Tea Time Blog - Mussels Recipe

Yum! Mussels are one of my most favorite dishes and last week I was brave enough to try it myself! I always thought it was very hard to make but actually, it is quite simple – and absolutely delicious!!! So here we go:

Ingredients (serves 4)

For the mussels:

  • 2kg mussels
  • 200ml white wine
  • 1/2 an onion
  • 2 garlic cloves
  • Salt and pepper

For the Sauce:

  • 2 garlic cloves
  • 1/2 an onion
  • 1 tablespoon of butter
  • 2 tablespoons of flour
  • 300ml white wine
  • 450ml cream
  • Herbs
  • Salt and pepper

Directions

For the Sauce:

  1. Cut the garlic and the onion into little pieces and fry them in butter until glassy.
  2. Pour the flour on top of it and deglaze everything with the white wine.
  3. Let the sauce reduce a little bit and then add the cream. Leave it on the stove for about 5 minutes.
  4. Add herbs, salt and pepper.

For the mussels:

  1. Clean the mussels under cold water. Throw broken mussels away.
  2. Cut the garlic into small cubes and the onion into bitter pieces.
  3. Add both to the pot and pour the white wine on top of it. Bring everything to the boil.
  4. Add the mussels to the pot and let it cook for around 10 minutes. Remove all the mussels that have not opened by then and throw them away.
  5. Serve the mussels in a big bowl and pour the sauce over it

Sides and beverages

We served the mussels with some baked potatoes and used the sauce to dip them in. Potatoes or fries go very well with mussels. Also, we served it with cold white wine.

How to eat mussels?

When I had mussels for the first time, I was actually glad that an experienced friend explained to me how to eat them. It is fairly simple: Just cut one piece of flesh out of one mussel with a fork and than use this empty mussel to pick the flesh from the other mussels:
